Regional suppliers and value creation

It tastes best regionally

We source the majority of our products from regional and domestic producers in the circumcircle of approx. 60 km. Our kitchen team headed by Hans-Peter Gassner and Gregor Kaiser not only avoids packaging in the buffet area, but also presents a balanced selection of local products.

Fresh ingredients for pesto, salts, jam, elderberry syrup, tea,… are waiting in the hotel’s own organic herb garden directly in front of and behind the house. On our new panorama terrace there is our own guest herb garden where our guests can refine and pimp the egg dish, salads, bread or dinner – everything is edible, delicious and fresh.

Crunchy bread and pastries is from the Bakery Schroll from Neukirchen in family ownership since 1885 – side fact: Hans-Peter’s wife Sandra Gassner’s parents run this business. Great importance has always been attached to daily freshness. For the preparation of the many different products, traditional recipes and high-quality raw materials from Austria are used. They are produced using a special baking process/production method, namely the long-life process. The quality and shelf life is based on a 20-hour dough rest.

Sausage and meat products are supplied by Fleischhauerei Rumpold from Neukirchen (several times awarded gold). Our wild game specialities come from our own hunting in the Obersulzbachtal. Hans-Peter Gassner is a passionate hunter. Fresh fish (black brook trout, black brook char, salmon trout and smoked trout) from sustainable catches we obtain from Familie Grundner from Leogang.

Milk and cheese products from PinzgauMilch from Maishofen. Fresh milk comes from the Rohrerbauer directly from Neukirchen. Our Eggs (almost 38,000 units a year) come from the Firma Frank from Saalfelden, they are all from Austrian free-range or organic free-range production and have been awarded the AMA quality label. Fruit, vegetables and other products are supplied by Handelshaus Wedl from Saalfelden.
